Local listings pointing back to local landing pages isn't a bad thing, just make that 'ORDER NOW' button nice and prominent on the page!

Yes but those benefits are isolated to a very small number of sites in their or any other listing vendors network nowadays. Local Search traffic and influence has isolated to a very small number of publishers. Going as deep as possible on those is smarter than spraying and praying.
Is the rebrand happening gradually or on a specific day where all old signage is retired? I did a 4,500 location rebrand in a single day before so it's a loooong day but doable!

To get decent local backlinks - get the local business to partner with local orgs - charities, government bodies, events, chamber of commerce and their clients, vendor business partners. Keep it local.
Yes - no harm. Biggest priority : no but you're responding to customers after all and maybe an email alert that the business sends them back to the listing and considering it as an option in future purchase!

Would consider Yahoo, MapQuest (esp if your target demo is older - MQ ranks well in Google too under 'directions from A to B' searches + the top 5/6 vertical sites.
Would also syndicate to HERE, TomTom, Waze to fully cover in-car navigation exp.
