Is there any benefit to adding the real phone number that is on their GMB page in schema?

Interesting. I'm using my iPhone Xs version 12.3.1 and it uses Google Maps. This may be a setting on the phone, but I could not find it.

I'm on a Mac and using safari, when I search for a company name, I get the One Box that displays GMB info thereby using Google Maps.

We have been called to help on situations like this and found the largest culprit to be lack of or changed title and description tags.

As of June 11, 2018 all websites need an API key to use Google maps. Without it, you will see this: "This page can't load Google Maps correctly” and the map will display “For development purposes only"
