Business hours affect local search?

I have a client that has operating hours after 5pm and on Saturdays (they're not open during week days). When I search for their keyword, they show up farther down the SERP during the day during the regular work week - but if I search on a weekend or after 5pm they show up near the top. I'm going to keep following this, just to make sure its not some other issue - but if anyone knows if this is a ranking factor, it would be great to add it to the SEO troubleshooting checklist.

Anyone else notice this, I know it affects GBP's - as Darren Shaw and Joy Hawkins have mentioned.
