Are there any good examples of GMB Profile Descriptions to sort of model off of that follow guidelines without being too spammy?

Write the description the best way it describes what your business does. Don't optimize it for ranking by adding keywords, optimize it to be better understood by your potential customers.

As of @JoyHawkins from No, the Google My Business description does not impact ranking

After a lot of testing by many since the help center update, we can safely say the description has no impact in the 3-pack.
