We are seeing a wide variety of different results in our vertical (dentists) with listings for Products and no services, some with products and services (duplicate of both essentially).

E.g. some well-ranking results in the local maps have dental implants listed both as a service and a product.

What is the best practice here and any downsides to posting both?

We stopped adding products about 8 months ago and switched to only services on the basis that we are a service-based business.

Whats everyone's thoughts here?

I don't see any downsides to posting both - though I am also not sure it's worth the effort for products. Custom services can impact rankings, but in my experience products do not. Plus, Google does not like businesses adding services as products - they say the products section is only for physical products. That said, plenty of service businesses still add products so if you want to add them I say go for it, and make sure to add UTM tags to all links so you can track if they get any clicks.
