For example, where maps results include snippets from reviews relating to the search query. Is it only snippets from the actual review which qualify? Does/can Google ever grab a snippet from the review response? (I suspect NO as that would no doubt encourage a whole heap of spammy...

I already checked that and the category "pet supply store" doesn't come up even for a bricks & mortar business. Do you think it's worth trying to contact Google...it seems like it could be a mistake?
I could understand it if restricted to a physical address non SAB business....but...

I've just had a client advise me that his customer who left a review 3 days ago can see it when SHE looks at his GMB profile but no-one else seems to be able to? We certainly can't. I'm assuming that this will rectify itself in time.

We are looking at the one site one gmb solution. Question is, site A is ranking better - especially in Maps. Site B would be redirected to Site A.
Site B's GMB profile has 4 times the no. of reviews as Site A's so we plan to keep Site B's GMB profile.
Question is....will we loose...
