Two of my clients profiles have recently gotten suspended for deceptive content (which we can't find) and Policy Violation (which we think we have addressed becasue two companies share a Suite-we took videos of signage etc). Now I am somewhat gunshy of making edits on Profiles, like adding subcategories and services becasue I have read of others getting suspended for doing that, and it takes weeks to get an appeal through. Any advice on how to proceed with adding real subcategories and services to an existing profile, should I do it all at once, or over time? Just dont want to disturb the hornets nest of Googles algorythm.

Long term, you want to really build up a trusted account so that you run into this less and less. Avoid managing listings that belong to users that are likely breaking Google's guidelines. Certain industries are more prone to suspensions than others.

Currently, the wait time for suspensions is over a month, so if it's not crucial, and you're worried, maybe avoid edits on spammy industries for now.

My profile is good, besides managing two profiles that got suspended. Are others getting suspensions for regular edits adding subcategories and services/products, that is my concern?

I've never documented the cases where I'm confident an edit triggered a suspension. (Obviously, I should have!) Thoughts/opinions:

1.) As @JoyHawkins points out, some categories are more likely to get suspended than others
E.g. locksmiths = super-risky, book store = not risky

2.) Also as per Joy, I'm pretty sure the trust Google has in the user account making the edit is a factor
E.g. user account that makes a bunch of suggested edits on Maps that do not get accepted or writes a bunch of reviews that Google doesn't publish = low trust

3.) I also think the trust Google has in the Business Profile itself is a factor
E.g. if the profile name or address has changed a few times = low trust

4.) The type of edit has its own risk factor. Some things get edited/updated frequently, others don't.
E.g. Changes to the name, address, phone, website or primary category = risky. Adding a photo, holiday hours, post, photo = low risk.

I'm pretty sure I've triggered a suspension on a profile by editing the secondary categories.

I wouldn't worry about adding services. IMO, that's lower risk.

This is all opinion, not proven fact.
