Looks like my industry is now showing the icon and site name? above the organic desktop SERP results.

Not sure if this has already been standard in other industries.

How do we control what logo is shown, as well as the website name?

Imagine its schema markup, but havent found a correlation between the ones that show the correct logo/site name and those that do not.

Google Search uses a number of sources from a site's homepage to automatically determine site names, including:
  1. WebSite structured data
  2. Content in <title> elements
  3. Heading elements, such as <h1> elements
  4. og:site_name
So you're right, the best way to influence the site name is to use WebSite schema, and also make sure the sitename is set to business name in WP (or CMS) settings.

For the logo, this is pulled from the website Favicon which you can set up in WP (or CMS) settings. Here is how to do it in WP How to change your favicon in WordPress: a step-by-step guide
