If you create your GBP using your business name that isn't an LLC, is that detrimental to the approval process?

No, you do not have to be an LLC.

It is not detrimental. Google really doesn't care, or should I say enforce, whether you have LLC as part of your GBP name, even if it is part of your legal name. We own three distinct businesses and only one is an LLC and we don't show it on our GBP.

does it make it easier though when asked for your EIN number, you provide it? does having the business as an LLC make them approval it easier?

No, as @keyserholiday said in his earlier reply too, you do not need an LLC and it does not make the approval any easier or more difficult if you don't have one.
