One of my new Google Business Profile clients has a legacy account that was verified with a P.O. Box address several years ago. I now understand that this is a direct violation of Google’s current guidelines, and I want to update it to be fully compliant.

What is the best way to change the P.O. Box to the client’s real business address, and what steps should I take to prepare for the re-verification process in order to avoid a profile suspension?

It being from a P.O. makes exactly zero difference whatsoever. It's just a normal change of address.

Is it a SAB validated at a P.O. box or a visible P.O. address? I assume the plan is for the new address to be visible?

It is SAB..! And the new address is public. Commercial.

Then you should treat it like a normal move. Sadly, some advice that applies to moving a visible address (i.e. start by correcting as many listings as possible and start with a suggestion instead of an edit) is inapplicable to a SAB. All you can really do is treat it as if you were validating a new business: update you documentation (including stuff like website, socials and your key--understand: google-indexed--listings), have the documentation at hand, have the location and signage as ready as can be.
