We have removed access to the GBP for a user, who has left the business. However, he does still receive the monthly statistics notifications (number of calls, messages, driving directions etc.). How can that be? Is there any solution than the user unsubscribing himself from these mailings?

Just a couple quick ideas that you may have already considered.

Could it be that the former employee is getting the monthly Google Search Console report? Or do you have a group email or distribution email address associated with the GBP that the user's email address is part of?

This notification certainly has nothing to do with the GSC. And the user never had access to the GSC. Only individual email adresses have acceess to the GBP profile.
