Over the past three weeks, we’ve noticed a significant increase in Google automatically updating our GBP information, particularly our hours of operation.

We’re trying to determine if this is a broader trend or something specific to our business.

Has anyone else been seeing more of these edits or updates from Google lately, especially related to hours or other core business details?

I have seen this countless times over the years. Since its hours, check to make sure your hours are correct across the board.
 
Google has a history of going in a vertical/industry basis, so you would often see an uptick in, say, specifically health or beauty or home services etc. But the overall amount of actual edits going on at the time isn't changed.

That's probably why on a given individual account you might see what feels like a wave of edits, but on a global scale the edit levels are pretty much unchanged.

Similarly you might get a wave of edits because google is deploying a new form of them e.g. the social media edits or the logic-based edits to payment method-related attributed. That's less common and usually pretty obvious what's going on in such cases, though!
 
Did you push a change to hours recently? We've seen this happen in the past when we've made hours changes en masse to bulk listings for clients, especially if the hours have remained unchanged for years prior to the update. Also, if hours between the website and GBP don't match, or if there are multiple sets of hours on the landing page, Google tends to get confused and apply incorrect Google updates. They could also still be getting hours signals from other sources that don't match what you're submitting in GBP and trust the other signals more.
