I've been told that adding labels in the form of targted keywords to the back end of GBPs (advanced settings) can have a positive effect on SEO? Is this true? Thank you in advance.

False, Labels are just for internal search. If you manage many GBP profiles, they will make it easy to find the GBPs on your dashboard.
