Anybody seeing results in search from selecting any of these new attributes?

Yeah. A few people (including me) spotted this yesterday but it seems to not be rolled out to some categories.

But is anyone seeing these in the Business Profiles once selected? That's my question. Desktop/Mobile/Both?

With our accounts, it does not show in Desktop at all.

In mobile and tablet - on shows ONLY in the profiles in the ABOUT section. Not the OVERVIEW which would be more useful.

I'm seeing it on desktop, but only on Maps, not showing currently on the K.P. (for a marketing agency in Spain).

Just like @raellovepie mentions for the mobile results, on desktop it is not visible on the "Overview" section. You have to click on the ">", which leads to the "About" section.
